Hello and thank you for visiting my little baking corner, I'm Vaniece! I started this blog - Niecebakes in 2022. The blog is just an acronym of my name!
HOW VANIECE STARTED NIECEBAKES
As far as baking goes, I'm 100% self taught, I started baking at age 11. I actually enjoy the trial and error process that comes with being self-taught and learning about a bit of culinary science (perfectionist over here)! I started uni as a dancer and later on started a PhD in Sport and Exercise Science. During the time, I missed having a creative outlet and good food, so I decided to document all my favourite recipes on a blog I called Niecebakes!
ABOUT NIECEBAKES
This blog is now my creative outlet combining my love for recipe testing, photography and most important of all, my ridiculously high standards with food. So this will now be a place for home cooks and home bakers to get their daily dessert inspiration and perhaps their dopamine fix!
OUR FOCUS ON THE SCIENCE BEHIND BAKING
After failing at least 20 macaron batches, I became passionate about understanding the science behind the ingredients and techniques used in baking. With deeper knowledge in baking science, I was able to make informed decisions for my recipes and I'd love to share my experience and knowledge with you to help you achieve success in your own kitchen!
A BIT MORE ABOUT ME
I currently live in London, England (still not sure why sprinkles are called 100s & 1000s here), so naturally I gravitate towards going on sunny holidays! Outside baking and photography, I enjoy dancing (still!), cooking and traveling. Since moving to London, I was fortunate enough to have the opportunity to travel around Europe. One thing I loved about traveling was trying new food and learning about different food cultures. As a nod to my love for traveling and food, I've dedicated a separate recipe collection to food cultures in different countries- 80 bakes around the world, where I'll share a bake from a different country every week, so you guys can bake travel with me!
MY FAVOURITE TREATS
My favorite dessert to eat would have to be macarons or anything passionfruit flavored, but my favorite dessert to bake would definitely be palmiers (no cheating, puff pastry from scratch only!)

Our recipe collection has a mixture of elevated bakes like Ferrero Rocher cookies, comforting classics like cinnamon buns, and some healthier recipes!
Basically, the food you find on Niecebakes is the food I eat: practical, elevated and classic bakes for everyday occasions.

WHY SOME RECIPES JUST DIDN'T WORK FOR YOU
Most of the time, it's not you! the recipe could have been developed using a specific brand of flour or butter that had a very different protein or fat level or water absorption capability that led to a different result. For this very reason, I've linked each ingredient and equipment I use for my recipe, so you can get the exact same, if not very similar ingredients!
