MOCHA CUPCAKES
There’s nothing like having a cupcake and a cup of coffee in the afternoon, so I’ve made these mocha cupcakes! ☕️
A fluffy coffee cupcake topped with a out of the world silky smooth mocha buttercream, it’s all the things you want for your midweek afternoon treat! Plus, coffee flavoured cupcakes are a good excuse to have cupcakes for breakfast! Imagine a bite of mocha cupcake with your usual cup of coffee! It's the way to start the day right! 🤎

TOTAL TIME: ~53 MINUTES
INGREDIENTS
- 100g self raising flour
- 50g ground almond
- 1/2 tsp baking powder
- 50g Greek yogurt
- 50g vegetable oil
- 1 egg
- 100g caster sugar
- 25 ml milk
- 1 tsp coffee extract
FOR THE FROSTING
- 100g unsalted butter (room temperature)
- 50g icing sugar
- 60g melted dark chocolate
- 1tbsp coffee extract
DIRECTIONS
- 1. Whisk the eggs until light in colour, add sugar and continue mixing.
- Add yogurt, vegetable oil, ground almonds and mix.
- Stir in flour, vanilla vegan blend and baking powder. Add milk and coffee extract and mix.
- Preheat oven to 185C, fill muffin cups until 75% full.
- Bake for 18 minutes. Allow to cool completely on a cooling rack.
- For the frosting, whisk butter and icing sugar until cream colour. Add chocolate and coffee extract, mix until smooth.
- To assemble, pipe the buttercream on the cupcake with a tip of your choice!
