For the biscuit
Unsalted butter (softened) 70g
Icing sugar 50g
Whole egg 25g
Vanilla essence 1/2 tsp
Baking powder 1/2 tsp
Icing sugar 50g
Whole egg 25g
Vanilla essence 1/2 tsp
Baking powder 1/2 tsp
For the icing
Icing sugar 60g
Egg whites 5g
Vanilla Essence 1/2 tsp
Directions
- preheat oven to 180C
1. Mix softened butter with icing sugar until light in colour
2. Add eggs gradually (in 2 - 3 times)
3. Add vanilla essence
4. Add baking powder and plain flour. Lightly mix until combined. Do not over-mix.
5. Refrigerate dough for at least 1 hour.
6. Roll out dough to a thickness of 0.5cm
7. Line baking trays with parchment paper. Cut out cookies and transfer to baking tray.
8. Bake cookies for 12-15 minutes at 180C until golden brown.
9. To make the icing, simply combine all ingredients until a smooth paste forms. Adjust the consistency accordingly.
10. Once the biscuits are cool, decorate with icing!
