My top tips on how to get sky-high muffins like those in the bakery window
Muffins are easy to make, but I’m sure we’ve all been there with flat muffins. So I’m sharing 4 tips for a better rise in muffins! Continue reading below to get sky-high muffins- they would never be flat again!
1. Start baking at a higher temperature
- This allows a faster reaction rate in the leavening agent! I bake my muffins at 190C for 7 minutes and lowering to 170C.
Baking at 170C for the entire period (left) vs Baking at 190C first (right)
2. Rest the batter
- Allow the gluten in your batter to relax so they stretch out a bit more with the reaction from the leavening agent
3. Instead of filling the cups 2/3 full, fill them all the way!
-So long as the batter is thick enough, it won’t become a leaky mess
4. Don’t leave out that pinch of salt
- Salt strengthens the gluten structure, so your muffins won’t deflate
Follow these tips the next time you make muffins! You’re guaranteed to end up with bakery style muffins (with a muffin top and all!)
